Ingredients

  • 1 package Boursin cheese (Placed in the middle of the dish)
  • 1 cup Orzo (Uncooked)
  • 1/2 cup Sun-dried tomatoes (Jarred in oil)
  • 2 Garlic cloves (Minced)
  • 1/2 teaspoon Chili flakes
  • 1 teaspoon Basil (Dried)
  • 1 teaspoon Oregano (Dried)
  • to taste Salt
  • to taste Pepper
  • 2 cups Vegetable stock
  • as needed Oil from sun-dried tomatoes (Remaining oil from the jar)
  • 1/2 cup Smoked white cheddar cheese (Shredded)
  • 1 cup Spinach (Fresh)

Instructions

  1. Place the Boursin cheese in the middle of a baking dish.
  2. Add orzo, sun-dried tomatoes, minced garlic, chili flakes, basil, oregano, salt, and pepper to the dish.
  3. Pour vegetable stock and remaining oil from the sun-dried tomatoes jar over the ingredients.
  4. Bake in the oven for 10 minutes, then stir.
  5. Shred the smoked white cheddar cheese while the dish is baking.
  6. When the orzo is 90% cooked, mix in the shredded cheese and spinach.
  7. Bake for an additional 2-3 minutes until the spinach is wilted and the cheese is melted.
