Ingredients
- 1 package Boursin cheese (Placed in the middle of the dish)
- 1 cup Orzo (Uncooked)
- 1/2 cup Sun-dried tomatoes (Jarred in oil)
- 2 Garlic cloves (Minced)
- 1/2 teaspoon Chili flakes
- 1 teaspoon Basil (Dried)
- 1 teaspoon Oregano (Dried)
- to taste Salt
- to taste Pepper
- 2 cups Vegetable stock
- as needed Oil from sun-dried tomatoes (Remaining oil from the jar)
- 1/2 cup Smoked white cheddar cheese (Shredded)
- 1 cup Spinach (Fresh)
Instructions
- Place the Boursin cheese in the middle of a baking dish.
- Add orzo, sun-dried tomatoes, minced garlic, chili flakes, basil, oregano, salt, and pepper to the dish.
- Pour vegetable stock and remaining oil from the sun-dried tomatoes jar over the ingredients.
- Bake in the oven for 10 minutes, then stir.
- Shred the smoked white cheddar cheese while the dish is baking.
- When the orzo is 90% cooked, mix in the shredded cheese and spinach.
- Bake for an additional 2-3 minutes until the spinach is wilted and the cheese is melted.
