Oven-Baked Stuffed Pork Chops with Spinach and Bread Crumbs

Ingredients
- 4 bone-in pork chops, about 1-inch thick
- 2 cups fresh spinach, chopped
- 1 cup seasoned bread crumbs
- 4 oz cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Using a sharp knife, carefully cut a pocket into the side of each pork chop, being careful not to cut all the way through.
- In a medium bowl, combine the chopped spinach, cream cheese, bread crumbs, grated Parmesan, and minced garlic. Mix until well blended.
- Season the pork chops inside and out with salt and black pepper.
- Stuff each pork chop pocket with an equal amount of the spinach and bread crumb mixture, pressing gently to fill the cavity.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed pork chops for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
- Remove from oven and let the pork chops rest for 5 minutes before serving.
