  • 4 bone-in pork chops, about 1-inch thick
  • 2 cups fresh spinach, chopped
  • 1 cup seasoned bread crumbs
  • 4 oz cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Using a sharp knife, carefully cut a pocket into the side of each pork chop, being careful not to cut all the way through.
  3. In a medium bowl, combine the chopped spinach, cream cheese, bread crumbs, grated Parmesan, and minced garlic. Mix until well blended.
  4. Season the pork chops inside and out with salt and black pepper.
  5. Stuff each pork chop pocket with an equal amount of the spinach and bread crumb mixture, pressing gently to fill the cavity.
  6. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed pork chops for 2-3 minutes on each side until golden brown.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
  8. Remove from oven and let the pork chops rest for 5 minutes before serving.
