Ingredients

  • 1 cup rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1/4 cup peanut butter
  • 1 ripe banana, sliced
  • 1 tablespoon honey (optional)
  • 2 tablespoons chia seeds
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • a pinch of salt

Instructions

  1. In a medium bowl, combine the rolled oats, chia seeds, cinnamon, and a pinch of salt.
  2. In another bowl, mix the milk, peanut butter, honey (if using), and vanilla extract until well combined.
  3. Pour the wet mixture into the dry ingredients and stir until everything is evenly mixed.
  4. Fold in the sliced banana gently.
  5. Transfer the mixture into two jars or airtight containers, ensuring an even distribution.
  6. Seal the jars and refrigerate overnight (or for at least 8 hours) to allow the oats to soak and soften.
  7. In the morning, give the oats a good stir. You can add additional milk if you prefer a creamier consistency.
  8. Top with more banana slices and a drizzle of peanut butter if desired before serving.
