Peanut Butter Banana Overnight Oats

Ingredients
- 1 cup rolled oats
- 1 cup milk (dairy or non-dairy)
- 1/4 cup peanut butter
- 1 ripe banana, sliced
- 1 tablespoon honey (optional)
- 2 tablespoons chia seeds
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- a pinch of salt
Instructions
- In a medium bowl, combine the rolled oats, chia seeds, cinnamon, and a pinch of salt.
- In another bowl, mix the milk, peanut butter, honey (if using), and vanilla extract until well combined.
- Pour the wet mixture into the dry ingredients and stir until everything is evenly mixed.
- Fold in the sliced banana gently.
- Transfer the mixture into two jars or airtight containers, ensuring an even distribution.
- Seal the jars and refrigerate overnight (or for at least 8 hours) to allow the oats to soak and soften.
- In the morning, give the oats a good stir. You can add additional milk if you prefer a creamier consistency.
- Top with more banana slices and a drizzle of peanut butter if desired before serving.
