Ingredients
- 1 cup dried porcini mushrooms (soaked for 10 minutes)
- 1 bunch parsley (chopped)
- 3 cloves garlic (minced)
- 1 teaspoon red pepper flakes
- to taste salt
- 2 tablespoons tomato paste
- 50 cracks black pepper
- 1.5 cups pasta water
- 1 cup Parmesan cheese (grated)
- 1 splash cream
- 400 grams pasta (cooked)
Instructions
- Soak dried porcini mushrooms in water for 10 minutes.
- In a cold pan, add chopped parsley, minced garlic, red pepper flakes, and salt, then fry gently.
- Save the mushroom soaking water, chop the porcini mushrooms, and add them to the pan with tomato paste and 50 cracks of black pepper.
- Add a cup and a half of pasta water and the reserved mushroom broth to the pan, mixing everything together.
- Grate Parmesan cheese into the mixture.
- Finish the sauce with a splash of cream and combine with cooked pasta.
