  • 1 cup dried porcini mushrooms (soaked for 10 minutes)

  • 1 teaspoon red pepper flakes

  • 2 tablespoons tomato paste
  • 50 cracks black pepper
  • 1.5 cups pasta water
  • 1 cup Parmesan cheese (grated)
  • 1 splash cream
  • 400 grams pasta (cooked)

Instructions

  1. Soak dried porcini mushrooms in water for 10 minutes.
  2. In a cold pan, add chopped parsley, minced garlic, red pepper flakes, and salt, then fry gently.
  3. Save the mushroom soaking water, chop the porcini mushrooms, and add them to the pan with tomato paste and 50 cracks of black pepper.
  4. Add a cup and a half of pasta water and the reserved mushroom broth to the pan, mixing everything together.
  5. Grate Parmesan cheese into the mixture.
  6. Finish the sauce with a splash of cream and combine with cooked pasta.
