Ingredients

  • 1 pound pork tenderloin, cut into cubes
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/2 teaspoon black pepper
  • 1 cup pineapple chunks
  • 6 wooden skewers, soaked in water

Instructions

  1. In a large bowl, combine the soy sauce, brown sugar, garlic, ginger, and black pepper to create a marinade.
  2. Cut the pork tenderloin into 1-inch cubes and add them to the marinade. Cover the bowl and refrigerate for at least 1 hour, or overnight for maximum flavor.
  3. While the pork is marinating, prepare the pineapple by cutting it into 1-inch chunks.
  4. Soak wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
  5. Preheat the grill to medium-high heat.
  6. Once the pork has marinated, thread the pork and pineapple chunks alternately onto the soaked skewers.
  7. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the pork is cooked through and the pineapple is caramelized.
  8. Remove the skewers from the grill and let them rest for a few minutes before serving.
