Pork Pineapple Skewers

Ingredients
- 1 pound pork tenderloin, cut into cubes
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/2 teaspoon black pepper
- 1 cup pineapple chunks
- 6 wooden skewers, soaked in water
Instructions
- In a large bowl, combine the soy sauce, brown sugar, garlic, ginger, and black pepper to create a marinade.
- Cut the pork tenderloin into 1-inch cubes and add them to the marinade. Cover the bowl and refrigerate for at least 1 hour, or overnight for maximum flavor.
- While the pork is marinating, prepare the pineapple by cutting it into 1-inch chunks.
- Soak wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
- Preheat the grill to medium-high heat.
- Once the pork has marinated, thread the pork and pineapple chunks alternately onto the soaked skewers.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the pork is cooked through and the pineapple is caramelized.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
