Ingredients

  • as needed Olive oil (for drizzling)
  • 1 sheet Parchment paper
  • as needed Mozzarella cheese (shredded)
  • 3 Potato (cooked and halved)
  • to taste Salt
  • to taste Crushed red pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place a sheet of parchment paper on a baking sheet and drizzle with olive oil.
  3. Place shredded mozzarella cheese on the parchment paper.
  4. Place half of a cooked potato on top of the cheese and smash it with a glass.
  5. Drizzle more olive oil over the smashed potato and season with salt and crushed red pepper to taste.
  6. Add more shredded mozzarella cheese on top.
  7. Repeat the process five more times with the remaining potato halves.
  8. Bake in the preheated oven until golden and bubbly, about 20-25 minutes.
