Sausage Tortellini Soup

Ingredients
- Olive oil for sautéing, 2 tablespoons
- Italian sausage, 1 pound (casings removed)
- Diced onion, 1 cup
- Minced garlic, 3 cloves
- Chopped carrots, 1 cup
- Diced tomatoes (canned), 1 can (14.5 ounces)
- Chicken broth, 4 cups
- Italian seasoning, 1 tablespoon
- Cheese tortellini, 9 ounces (fresh or frozen)
- Fresh spinach, 2 cups (packed)
- Salt, 1 each
- Black pepper, 1 each
- Grated Parmesan cheese for serving, 1/2 cup
- Fresh basil for garnish, 1 each
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Once the sausage is browned, add the diced onion, minced garlic, and chopped carrots. Sauté for an additional 3-4 minutes until the vegetables are softened.
- Stir in the diced tomatoes (with their juices), chicken broth, and Italian seasoning. Bring the mixture to a boil.
- Once boiling, reduce the heat to a simmer and add the tortellini. Cook according to package instructions, usually around 5-7 minutes.
- When the tortellini is cooked, stir in the spinach and let it wilt for about 2 minutes.
- Season the soup with salt and pepper, adding 1 each of salt and pepper, adjusting to your preference.
- Serve the soup hot, garnished with grated Parmesan cheese and fresh basil if desired.
