  • Chicken broth, 4 cups
  • Italian seasoning, 1 tablespoon
  • Cheese tortellini, 9 ounces (fresh or frozen)
  • Fresh spinach, 2 cups (packed)
  • Salt, 1 each
  • Black pepper, 1 each
  • Grated Parmesan cheese for serving, 1/2 cup
  • Fresh basil for garnish, 1 each

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Once the sausage is browned, add the diced onion, minced garlic, and chopped carrots. Sauté for an additional 3-4 minutes until the vegetables are softened.
  3. Stir in the diced tomatoes (with their juices), chicken broth, and Italian seasoning. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to a simmer and add the tortellini. Cook according to package instructions, usually around 5-7 minutes.
  5. When the tortellini is cooked, stir in the spinach and let it wilt for about 2 minutes.
  6. Season the soup with salt and pepper, adding 1 each of salt and pepper, adjusting to your preference.
  7. Serve the soup hot, garnished with grated Parmesan cheese and fresh basil if desired.
