Savory Beef Tips in Mushroom Gravy

Ingredients
- 1 pound of beef tips
- 8 ounces of fresh button mushrooms, sliced
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 2 cups of beef broth
- 1/2 cup of heavy cream
- 2 tablespoons of soy sauce
- 2 tablespoons of olive oil
- 1 tablespoon of cornstarch
- 1 teaspoon of black pepper
- 1 teaspoon of salt
- 2 tablespoons of fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the diced onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are browned, about 5 minutes.
- Add the beef tips to the skillet and sear until browned on all sides, about 5-7 minutes.
- Pour in the beef broth and soy sauce, followed by the black pepper and salt. Stir to combine.
- Bring the mixture to a simmer, then reduce heat to low and cover. Let it cook for 15 minutes.
- In a small bowl, mix the cornstarch with a little water to create a slurry. Stir this into the skillet to thicken the gravy.
- Add the heavy cream, stirring gently until the gravy is creamy and well combined. Simmer for an additional 5 minutes.
- Serve the beef tips and gravy over mashed potatoes or rice, garnished with fresh parsley.
