Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are browned, about 5 minutes.
  4. Add the beef tips to the skillet and sear until browned on all sides, about 5-7 minutes.
  5. Pour in the beef broth and soy sauce, followed by the black pepper and salt. Stir to combine.
  6. Bring the mixture to a simmer, then reduce heat to low and cover. Let it cook for 15 minutes.
  7. In a small bowl, mix the cornstarch with a little water to create a slurry. Stir this into the skillet to thicken the gravy.
  8. Add the heavy cream, stirring gently until the gravy is creamy and well combined. Simmer for an additional 5 minutes.
  9. Serve the beef tips and gravy over mashed potatoes or rice, garnished with fresh parsley.
