Savory Chickpea Salad
Ingredients
- 1 can (15 ounces) of chickpeas, rinsed and drained
- 1 cup diced cucumber
- 1 cup halved cherry tomatoes
- 1/2 cup diced red onion
- 1/2 cup crumbled feta cheese
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- pinch of black pepper
- chopped fresh parsley for garnish
Instructions
- Rinse and drain 1 can of chickpeas in a colander and set aside.
- In a large mixing bowl, combine the drained chickpeas with 1 cup of diced cucumber, 1 cup of halved cherry tomatoes, and 1/2 cup of diced red onion.
- Add 1/2 cup of crumbled feta cheese to the bowl. If desired, you can use additional cheese for a stronger flavor.
- In a small bowl, whisk together 1/4 cup of extra virgin olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of dried oregano, and a pinch of black pepper.
- Pour the dressing over the salad mixture and gently toss to combine all the ingredients evenly.
- Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Serve the salad chilled, garnished with chopped fresh parsley.
