  • 1 can (15 ounces) of chickpeas, rinsed and drained
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • pinch of black pepper
  • chopped fresh parsley for garnish

Instructions

  1. Rinse and drain 1 can of chickpeas in a colander and set aside.
  2. In a large mixing bowl, combine the drained chickpeas with 1 cup of diced cucumber, 1 cup of halved cherry tomatoes, and 1/2 cup of diced red onion.
  3. Add 1/2 cup of crumbled feta cheese to the bowl. If desired, you can use additional cheese for a stronger flavor.
  4. In a small bowl, whisk together 1/4 cup of extra virgin olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of dried oregano, and a pinch of black pepper.
  5. Pour the dressing over the salad mixture and gently toss to combine all the ingredients evenly.
  6. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
  7. Serve the salad chilled, garnished with chopped fresh parsley.
