Savory Chickpea Stew

Ingredients
- 2 tablespoons of olive oil
- 1 medium onion, diced
- 4 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of smoked paprika
- 1 bell pepper, chopped
- 1 medium zucchini, chopped
- 1 can (14.5 ounces) of diced tomatoes
- 2 cups of vegetable broth
- 1 can (15 ounces) of chickpeas, drained
- salt to taste
- black pepper to taste
- 2 cups of fresh spinach
- fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic, cumin, coriander, and smoked paprika. Cook for another minute until the spices are fragrant.
- Add the chopped bell peppers and zucchini to the pot and cook for 5 minutes until they are slightly softened.
- Pour in the diced tomatoes, vegetable broth, and add the drained chickpeas. Stir well to combine all ingredients.
- Season the stew with salt and black pepper to taste. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, allowing the flavors to meld.
- Just before serving, stir in the fresh spinach and cook until wilted, about 3 minutes.
- Garnish with fresh parsley before serving.
