Ingredients

  • 2 tablespoons of olive oil
  • 1 medium onion, diced
  • 4 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of smoked paprika
  • 1 bell pepper, chopped
  • 1 medium zucchini, chopped
  • 1 can (14.5 ounces) of diced tomatoes
  • 2 cups of vegetable broth
  • 1 can (15 ounces) of chickpeas, drained
  • salt to taste
  • black pepper to taste
  • 2 cups of fresh spinach
  • fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic, cumin, coriander, and smoked paprika. Cook for another minute until the spices are fragrant.
  3. Add the chopped bell peppers and zucchini to the pot and cook for 5 minutes until they are slightly softened.
  4. Pour in the diced tomatoes, vegetable broth, and add the drained chickpeas. Stir well to combine all ingredients.
  5. Season the stew with salt and black pepper to taste. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, allowing the flavors to meld.
  6. Just before serving, stir in the fresh spinach and cook until wilted, about 3 minutes.
  7. Garnish with fresh parsley before serving.
