Savory Mongolian Beef Stir-Fry

Ingredients
- 1 pound beef flank steak, thinly sliced
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons cornstarch
- 3 tablespoons vegetable oil, divided
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 cup green onions, chopped
- 1 red bell pepper, sliced
- 1 tablespoon sesame seeds (optional, for garnish)
Instructions
- In a medium bowl, combine the sliced beef, cornstarch, and half of the soy sauce (2 tablespoons). Toss well to coat the beef and let it marinate for about 10 minutes.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated beef in a single layer. Sear for 2-3 minutes until browned, then flip and cook for another 1-2 minutes until fully cooked. Remove the beef from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
- Add the sliced red bell pepper and chopped green onions to the skillet. Stir-fry for 2-3 minutes until the vegetables are tender but still crisp.
- Return the cooked beef to the skillet. Pour in the remaining soy sauce and brown sugar. Stir to combine, cooking for an additional 2-3 minutes until the sauce thickens slightly and coats the beef and vegetables.
- Serve hot, garnished with sesame seeds if desired, over steamed rice or noodles.
