Savory Sausage and Sauerkraut Skillet

Ingredients
- 4 links of chicken sausage
- 2 cups of sauerkraut, drained
- 2 large russet potatoes, diced
- 1 medium yellow onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 bay leaf
- 1 teaspoon of black pepper
- 1 teaspoon of smoked paprika (optional)
- 2 tablespoons of fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic and continue to cook for an additional 1 minute, until fragrant.
- Add the diced potatoes to the skillet and cook for approximately 10 minutes, stirring occasionally, until they begin to soften.
- While the potatoes are cooking, slice the chicken sausages into bite-sized pieces.
- Push the potatoes to the side of the skillet and add the sausage pieces. Cook for 5-7 minutes, allowing the sausage to brown on all sides.
- Once the sausage is browned, add the sauerkraut, bay leaf, black pepper, and smoked paprika (if using) to the skillet. Stir well to combine.
- Cover the skillet and reduce the heat to low, allowing to simmer for another 10-15 minutes, or until the potatoes are tender and cooked through. Remove the bay leaf before serving.
- Garnish with chopped parsley and serve warm.
