Ingredients

  • 4 links of chicken sausage
  • 2 cups of sauerkraut, drained
  • 2 large russet potatoes, diced
  • 1 medium yellow onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 bay leaf
  • 1 teaspoon of black pepper
  • 1 teaspoon of smoked paprika (optional)
  • 2 tablespoons of fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. Stir in the minced garlic and continue to cook for an additional 1 minute, until fragrant.
  3. Add the diced potatoes to the skillet and cook for approximately 10 minutes, stirring occasionally, until they begin to soften.
  4. While the potatoes are cooking, slice the chicken sausages into bite-sized pieces.
  5. Push the potatoes to the side of the skillet and add the sausage pieces. Cook for 5-7 minutes, allowing the sausage to brown on all sides.
  6. Once the sausage is browned, add the sauerkraut, bay leaf, black pepper, and smoked paprika (if using) to the skillet. Stir well to combine.
  7. Cover the skillet and reduce the heat to low, allowing to simmer for another 10-15 minutes, or until the potatoes are tender and cooked through. Remove the bay leaf before serving.
  8. Garnish with chopped parsley and serve warm.
