Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and grated ginger, cooking for an additional minute until fragrant.
  4. Add sliced carrots, chopped bell pepper, zucchini, and cauliflower florets. Sauté for 5-7 minutes until vegetables begin to soften.
  5. Stir in curry powder and red chili flakes, cooking for 1 minute to toast the spices.
  6. Pour in the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a gentle simmer.
  7. Cover and let it cook for about 15-20 minutes, stirring occasionally, until the vegetables are tender.
  8. Season with salt to taste.
  9. Serve hot, garnished with fresh cilantro, alongside rice or naan.
