Simple Spicy Vegetable Curry

Ingredients
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 medium carrots, sliced
- 1 red bell pepper, chopped
- 1 medium zucchini, chopped
- 1 cup cauliflower florets
- 1 can (400 ml) coconut milk
- 1 cup vegetable broth
- 2 tablespoons curry powder
- 1 teaspoon red chili flakes
- 2 tablespoons olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Add sliced carrots, chopped bell pepper, zucchini, and cauliflower florets. Sauté for 5-7 minutes until vegetables begin to soften.
- Stir in curry powder and red chili flakes, cooking for 1 minute to toast the spices.
- Pour in the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a gentle simmer.
- Cover and let it cook for about 15-20 minutes, stirring occasionally, until the vegetables are tender.
- Season with salt to taste.
- Serve hot, garnished with fresh cilantro, alongside rice or naan.
