Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Sear the beef tips on all sides until browned, about 5 minutes.
  2. Transfer the seared beef tips to the slow cooker.
  3. In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant and the onion is translucent.
  4. Add the sliced mushrooms to the skillet and cook for an additional 4 minutes until they start to soften.
  5. Pour the beef broth, soy sauce, Worcestershire sauce, dried thyme, and black pepper into the skillet, stirring well to combine. Bring to a simmer.
  6. Pour the mushroom mixture over the beef tips in the slow cooker, ensuring the beef is covered with the sauce.
  7. Cover and cook on low for 6 hours or until the beef is tender and easily shredded with a fork.
  8. Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
