Slow Cooker Low-Carb Beef Tips with Mushrooms

Ingredients
- beef tips (1.5 pounds)
- cremini mushrooms, sliced (8 ounces)
- yellow onion, diced (1 medium)
- garlic cloves, minced (3 cloves)
- low-sodium beef broth (2 cups)
- low-sodium soy sauce (1/4 cup)
- Worcestershire sauce (2 tablespoons)
- dried thyme (1 teaspoon)
- freshly ground black pepper (1/2 teaspoon)
- olive oil (2 tablespoons)
- fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Sear the beef tips on all sides until browned, about 5 minutes.
- Transfer the seared beef tips to the slow cooker.
- In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant and the onion is translucent.
- Add the sliced mushrooms to the skillet and cook for an additional 4 minutes until they start to soften.
- Pour the beef broth, soy sauce, Worcestershire sauce, dried thyme, and black pepper into the skillet, stirring well to combine. Bring to a simmer.
- Pour the mushroom mixture over the beef tips in the slow cooker, ensuring the beef is covered with the sauce.
- Cover and cook on low for 6 hours or until the beef is tender and easily shredded with a fork.
- Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
