Spicy Korean BBQ Beef Tacos
Ingredients
- 1 pound beef sirloin, thinly sliced
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons Gochujang (Korean red chili paste)
- 1 teaspoon black pepper
- 8 corn tortillas
- 1 cup shredded cabbage
- 1/2 cup sliced carrots
- 1/4 cup chopped green onions
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges for serving
Instructions
- In a bowl, mix the soy sauce, brown sugar, sesame oil, garlic, ginger, Gochujang, and black pepper to create a marinade.
- Slice the beef into thin strips and add to the marinade, ensuring all pieces are evenly coated. Let marinate for at least 30 minutes.
- Preheat a grill or skillet over medium-high heat. Cook the marinated beef for 3-4 minutes on each side, or until fully cooked and nicely charred.
- While the beef is cooking, prepare the corn tortillas by warming them in a separate skillet for about 30 seconds on each side.
- Once the beef is done, remove it from heat and let it rest for a few minutes before dicing into smaller pieces.
- To assemble the tacos, place a portion of the diced beef onto each tortilla.
- Top with shredded cabbage, sliced carrots, chopped green onions, and fresh cilantro.
- Drizzle with extra Gochujang sauce if desired, and serve with lime wedges on the side.
