  • 1 pound beef sirloin, thinly sliced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons Gochujang (Korean red chili paste)
  • 1 teaspoon black pepper
  • 8 corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup sliced carrots
  • 1/4 cup chopped green onions
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges for serving

Instructions

  1. In a bowl, mix the soy sauce, brown sugar, sesame oil, garlic, ginger, Gochujang, and black pepper to create a marinade.
  2. Slice the beef into thin strips and add to the marinade, ensuring all pieces are evenly coated. Let marinate for at least 30 minutes.
  3. Preheat a grill or skillet over medium-high heat. Cook the marinated beef for 3-4 minutes on each side, or until fully cooked and nicely charred.
  4. While the beef is cooking, prepare the corn tortillas by warming them in a separate skillet for about 30 seconds on each side.
  5. Once the beef is done, remove it from heat and let it rest for a few minutes before dicing into smaller pieces.
  6. To assemble the tacos, place a portion of the diced beef onto each tortilla.
  7. Top with shredded cabbage, sliced carrots, chopped green onions, and fresh cilantro.
  8. Drizzle with extra Gochujang sauce if desired, and serve with lime wedges on the side.
