Spicy Korean BBQ Meatballs
  • 1 pound of ground beef
  • 1/2 cup of breadcrumbs
  • 1/4 cup chopped green onions
  • 3 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, grated
  • 1 tablespoon of sesame oil
  • 2 tablespoons of soy sauce
  • 1 tablespoon of gochugaru (Korean red pepper flakes)
  • 1 tablespoon of sugar
  • 1 teaspoon of salt
  • 1/4 cup of gochujang (Korean chili paste)
  • 2 tablespoons of honey
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, green onions, garlic, ginger, sesame oil, soy sauce, gochugaru, sugar, and salt. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them onto the prepared baking sheet.
  4. Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and golden brown.
  5. While the meatballs are baking, prepare the spicy BBQ sauce. In a small saucepan, combine the gochujang, honey, soy sauce, rice vinegar, and sesame oil. Heat over medium heat, stirring until the sauce is well combined and slightly thickened.
  6. Once the meatballs are cooked, remove them from the oven and drizzle the spicy BBQ sauce over the top, tossing to coat evenly.
  7. Serve the spicy Korean BBQ meatballs garnished with additional sliced green onions and sesame seeds.
