  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika

  • 1 ripe avocado
  • 1/4 cup sour cream
  • 1 tablespoon fresh lime juice
  • 1 cup shredded red cabbage
  • 1/4 cup fresh cilantro, chopped
  • 8 corn tortillas
  • 1 lime, cut into wedges for serving

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and dice the sweet potatoes into 1/2 inch cubes. Place them on a baking sheet.
  3. Drizzle the diced sweet potatoes with olive oil, and sprinkle with chili powder, cumin, paprika, salt, and pepper. Toss to coat evenly.
  4. Spread the sweet potatoes in an even layer on the baking sheet and roast in the preheated oven for about 25-30 minutes, or until tender and lightly browned, stirring halfway through.
  5. While the sweet potatoes are roasting, prepare the avocado crema by combining the ripe avocado, sour cream, lime juice, and salt in a blender. Blend until smooth and creamy. If necessary, add a small amount of water to achieve your desired consistency.
  6. Warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side until pliable.
  7. To assemble the tacos, add a generous scoop of roasted sweet potatoes to each tortilla. Top with red cabbage, cilantro, and a drizzle of avocado crema.
  8. Serve immediately with lime wedges on the side.
