Ingredients
- 2 whole Tomatoes (chopped)
- 1 whole Cucumbers (sliced)
- 1 whole Onions (sliced)
- 1 can Chickpeas (drained and rinsed)
- 1 cup Chimichurri sauce (store-bought or homemade)
- 1 pound Filet mignon (grilled)
- 1/2 cup Goat cheese (crumbled)
- 1 whole Avocado (sliced)
Instructions
- Chop the tomatoes, slice the cucumbers and onions, and add them to a mixing bowl.
- Add the chickpeas to the bowl.
- Pour the chimichurri sauce over the vegetables and chickpeas and mix well to coat evenly.
- Grill the filet mignon to your desired doneness and slice it.
- Add the sliced steak to the salad and mix gently.
- Plate the salad and top with crumbled goat cheese and sliced avocado.
