Ingredients

  • 2 whole Tomatoes (chopped)
  • 1 whole Cucumbers (sliced)
  • 1 whole Onions (sliced)
  • 1 can Chickpeas (drained and rinsed)
  • 1 cup Chimichurri sauce (store-bought or homemade)
  • 1 pound Filet mignon (grilled)
  • 1/2 cup Goat cheese (crumbled)
  • 1 whole Avocado (sliced)

Instructions

  1. Chop the tomatoes, slice the cucumbers and onions, and add them to a mixing bowl.
  2. Add the chickpeas to the bowl.
  3. Pour the chimichurri sauce over the vegetables and chickpeas and mix well to coat evenly.
  4. Grill the filet mignon to your desired doneness and slice it.
  5. Add the sliced steak to the salad and mix gently.
  6. Plate the salad and top with crumbled goat cheese and sliced avocado.
