Sunrise Mediterranean Frittata

Ingredients
- 2 tablespoons of olive oil
- 1 medium onion, diced
- 1 medium bell pepper, diced
- 1 cup cherry tomatoes, halved
- 6 large eggs
- 1/2 cup of crumbled feta cheese
- 1 cup fresh spinach, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onions and sauté until they are translucent, about 5 minutes.
- Add the chopped bell peppers and cook for an additional 3-4 minutes until softened.
- Stir in the cherry tomatoes and cook until they start to soften, about 2 minutes.
- In a bowl, whisk together the eggs, salt, and pepper until well combined. Stir in the crumbled feta cheese and chopped fresh spinach.
- Pour the egg mixture into the skillet over the sautéed vegetables. Cook undisturbed for 2-3 minutes until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden on top.
- Remove from the oven and let cool for a couple of minutes. Slice into wedges and serve warm or at room temperature.
