  • 1 cup cherry tomatoes, halved
  • 6 large eggs
  • 1/2 cup of crumbled feta cheese
  • 1 cup fresh spinach, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onions and sauté until they are translucent, about 5 minutes.
  3. Add the chopped bell peppers and cook for an additional 3-4 minutes until softened.
  4. Stir in the cherry tomatoes and cook until they start to soften, about 2 minutes.
  5. In a bowl, whisk together the eggs, salt, and pepper until well combined. Stir in the crumbled feta cheese and chopped fresh spinach.
  6. Pour the egg mixture into the skillet over the sautéed vegetables. Cook undisturbed for 2-3 minutes until the edges start to set.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden on top.
  8. Remove from the oven and let cool for a couple of minutes. Slice into wedges and serve warm or at room temperature.
