Ingredients

  • 1 pound of pork tenderloin, cut into 1-inch cubes
  • salt to taste
  • black pepper to taste
  • 1/2 cup of cornstarch
  • 1 large egg, beaten
  • for frying (approximately 2 cups)
  • 1 red bell pepper, diced
  • 1 medium onion, diced
  • 1 cup of pineapple chunks (fresh or canned)
  • 1/2 cup of ketchup
  • 1/4 cup of rice vinegar
  • 1/4 cup of soy sauce
  • 1/4 cup of sugar
  • 1/4 cup of water

Instructions

  1. Cut the pork tenderloin into 1-inch cubes and season with salt and pepper.
  2. In a large bowl, combine the cornstarch and the egg, mixing until smooth. Add the pork cubes and coat them well with the mixture.
  3. Heat a deep fryer or a large pot with oil over medium-high heat. Carefully add the pork cubes in batches and fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.
  4. In a separate pan, heat 2 tablespoons of oil over medium heat. Add the bell peppers, onion, and pineapple chunks, sautéing until they are tender, about 5 minutes.
  5. In a small bowl, mix together the ketchup, rice vinegar, soy sauce, sugar, and water to create the sweet and sour sauce.
  6. Pour the sauce over the sautéed vegetables and bring to a simmer. Cook for about 3-4 minutes until the sauce thickens slightly.
  7. Add the fried pork to the sauce and toss until all the ingredients are well coated in the sauce.
  8. Serve hot over steamed rice.
