Sweet and Sour Pork

Ingredients
- 1 pound of pork tenderloin, cut into 1-inch cubes
- salt to taste
- black pepper to taste
- 1/2 cup of cornstarch
- 1 large egg, beaten
- for frying (approximately 2 cups)
- 1 red bell pepper, diced
- 1 medium onion, diced
- 1 cup of pineapple chunks (fresh or canned)
- 1/2 cup of ketchup
- 1/4 cup of rice vinegar
- 1/4 cup of soy sauce
- 1/4 cup of sugar
- 1/4 cup of water
Instructions
- Cut the pork tenderloin into 1-inch cubes and season with salt and pepper.
- In a large bowl, combine the cornstarch and the egg, mixing until smooth. Add the pork cubes and coat them well with the mixture.
- Heat a deep fryer or a large pot with oil over medium-high heat. Carefully add the pork cubes in batches and fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.
- In a separate pan, heat 2 tablespoons of oil over medium heat. Add the bell peppers, onion, and pineapple chunks, sautéing until they are tender, about 5 minutes.
- In a small bowl, mix together the ketchup, rice vinegar, soy sauce, sugar, and water to create the sweet and sour sauce.
- Pour the sauce over the sautéed vegetables and bring to a simmer. Cook for about 3-4 minutes until the sauce thickens slightly.
- Add the fried pork to the sauce and toss until all the ingredients are well coated in the sauce.
- Serve hot over steamed rice.
