Sweet Chili Chicken Tacos

Ingredients
- 1 pound of boneless, skinless chicken breast, diced
- 1/2 cup of sweet chili sauce for marinating and serving
- Juice of 2 limes, for marinating and serving
- 3 cloves of garlic, minced
- 2 tablespoons of vegetable oil for cooking
- 8 corn tortillas for serving
- 1 avocado, diced for topping
- 1/2 cup of fresh cilantro, chopped for garnish
- 1 teaspoon of salt for seasoning
- Additional sweet chili sauce for serving
Instructions
- In a bowl, combine the diced chicken breast, sweet chili sauce, lime juice, garlic, and a pinch of salt. Mix well to coat evenly and let marinate for 30 minutes.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and sauté until fully cooked, about 6-8 minutes.
- While the chicken is cooking, warm the corn tortillas in a separate skillet until they are pliable, about 30 seconds on each side.
- Once the chicken is cooked, remove from heat and prepare to assemble the tacos.
- Place a generous amount of the sautéed chicken on each warm tortilla.
- Top the chicken with diced avocado, chopped cilantro, and a squeeze of lime juice.
- Serve immediately with additional sweet chili sauce on the side.
