Ingredients

  • 1 pound of boneless, skinless chicken breast, diced
  • 1/2 cup of sweet chili sauce for marinating and serving
  • Juice of 2 limes, for marinating and serving
  • 3 cloves of garlic, minced
  • 2 tablespoons of vegetable oil for cooking
  • 8 corn tortillas for serving
  • 1 avocado, diced for topping
  • 1/2 cup of fresh cilantro, chopped for garnish
  • 1 teaspoon of salt for seasoning
  • Additional sweet chili sauce for serving

Instructions

  1. In a bowl, combine the diced chicken breast, sweet chili sauce, lime juice, garlic, and a pinch of salt. Mix well to coat evenly and let marinate for 30 minutes.
  2. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and sauté until fully cooked, about 6-8 minutes.
  3. While the chicken is cooking, warm the corn tortillas in a separate skillet until they are pliable, about 30 seconds on each side.
  4. Once the chicken is cooked, remove from heat and prepare to assemble the tacos.
  5. Place a generous amount of the sautéed chicken on each warm tortilla.
  6. Top the chicken with diced avocado, chopped cilantro, and a squeeze of lime juice.
  7. Serve immediately with additional sweet chili sauce on the side.
