Szechuan Noodles with Spicy Peanut Sauce

Ingredients
- 8 ounces Szechuan noodles
- 1/2 cup creamy peanut butter
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons sriracha sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 3 green onions, sliced
- 1/4 cup crushed peanuts for garnish
- Fresh cilantro for garnish
Instructions
- Start by cooking the Szechuan noodles according to package instructions. Drain and set aside.
- In a mixing bowl, combine the peanut butter, soy sauce, rice vinegar, sriracha, and sesame oil. Whisk together until smooth and creamy.
- In a large skillet over medium heat, add the minced garlic and sauté for about 1 minute until fragrant.
- Add the cooked Szechuan noodles to the skillet and pour the peanut sauce over the noodles. Toss well to combine and heat through for about 2-3 minutes.
- Once the noodles are well coated with the sauce, add the sliced green onions and toss again.
- Serve the noodles hot, garnished with crushed peanuts and fresh cilantro.
