Thai-Style Pork Meatballs with Sweet Chili Sauce

Ingredients
- 1 pound ground pork
- 3 garlic cloves, minced
- 2 shallots, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 green onions, finely sliced
- 1 tablespoon red curry paste
- 1 tablespoon fish sauce
- 1 teaspoon brown sugar
- 1 teaspoon lime zest
- 2 tablespoons vegetable oil (for frying)
- 1/2 cup sweet chili sauce (for dipping)
Instructions
- In a large mixing bowl, combine the ground pork, minced garlic, chopped shallots, chopped cilantro, sliced green onions, red curry paste, fish sauce, brown sugar, and lime zest. Mix thoroughly until all ingredients are well incorporated.
- Using your hands or a small scoop, form the mixture into 1-inch meatballs and place them on a plate or tray.
- Heat the vegetable oil in a large skillet over medium heat.
- Add the meatballs in batches, ensuring not to overcrowd the pan. Cook for about 5-7 minutes, turning occasionally, until the meatballs are cooked through and evenly browned on all sides.
- Remove the cooked meatballs and drain on paper towels to remove excess oil.
- Serve the meatballs warm with sweet chili sauce on the side for dipping.
- Optional: Garnish with additional chopped cilantro and a squeeze of fresh lime juice for extra brightness.
