Vegan Chocolate Peanut Butter Pie

Ingredients
- 1 1/2 cups vegan chocolate cookie crumbs
- 5 tablespoons melted vegan butter
- 12 ounces vegan cream cheese, softened
- 1 cup smooth peanut butter
- 3/4 cup powdered sugar
- 1 cup vegan whipped topping (such as coconut-based Cool Whip alternative), plus extra for garnish
- 1/2 cup dark vegan chocolate chips, melted (for drizzling)
Instructions
- In a medium bowl, combine the vegan chocolate cookie crumbs and melted vegan butter until the mixture resembles wet sand.
- Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish to form the crust.
- Place the crust in the refrigerator to chill while preparing the filling.
- In a large bowl, beat the softened vegan cream cheese, smooth peanut butter, and powdered sugar together until smooth and creamy.
- Gently fold in 1 cup of vegan whipped topping until fully incorporated and lightened.
- Spoon the peanut butter filling into the chilled crust and smooth the top with a spatula.
- Refrigerate the pie for at least 4 hours or until firm.
- Before serving, drizzle the melted dark vegan chocolate chips over the pie and add extra vegan whipped topping if desired.
- Slice and serve chilled.
