  • 1 large ripe mango, diced

  • 8 small corn tortillas
  • 1 avocado, sliced (optional)
  • 2 lime wedges for serving

Instructions

  1. In a bowl, combine the shrimp, olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and pepper. Mix well and let it marinate for 15 minutes.
  2. While the shrimp is marinating, prepare the mango salsa by mixing diced mango, red onion, jalapeño, cilantro, lime juice, and salt in another bowl. Set aside.
  3. Heat a skillet over medium-high heat and add the marinated shrimp. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque.
  4. Warm the corn tortillas by placing them in a dry skillet for about 30 seconds on each side or until pliable.
  5. To assemble the tacos, place some shrimp on each tortilla, top with mango salsa, and add sliced avocado if desired.
  6. Serve the tacos immediately with lime wedges on the side.
