Zesty Shrimp Tacos with Mango Salsa

Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 3 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 large ripe mango, diced
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and finely chopped
- 1/4 cup fresh cilantro, chopped
- 8 small corn tortillas
- 1 avocado, sliced (optional)
- 2 lime wedges for serving
Instructions
- In a bowl, combine the shrimp, olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and pepper. Mix well and let it marinate for 15 minutes.
- While the shrimp is marinating, prepare the mango salsa by mixing diced mango, red onion, jalapeño, cilantro, lime juice, and salt in another bowl. Set aside.
- Heat a skillet over medium-high heat and add the marinated shrimp. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque.
- Warm the corn tortillas by placing them in a dry skillet for about 30 seconds on each side or until pliable.
- To assemble the tacos, place some shrimp on each tortilla, top with mango salsa, and add sliced avocado if desired.
- Serve the tacos immediately with lime wedges on the side.
