  • 4 medium zucchinis, spiralized
  • 1 pound ground beef (or turkey)
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 large egg

  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for cooking)
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, grated parmesan cheese, chopped parsley, egg, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix until well combined.
  3. Form the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
  4. Bake the meatballs in the preheated oven for 20 minutes or until cooked through and browned.
  5. While the meatballs are baking, spiralize the zucchinis into noodles using a spiralizer.
  6. In a large skillet, heat olive oil over medium heat. Add the zucchini noodles and sauté for about 3-4 minutes, until just tender but still slightly crisp. Season with salt and pepper to taste.
  7. In the last few minutes of cooking the meatballs, heat the marinara sauce in a saucepan over medium heat until warmed through.
  8. To serve, plate the zucchini noodles, top with meatballs, and spoon marinara sauce over the top. Garnish with additional parsley or grated parmesan if desired.
