Zucchini Noodles with Savory Meatballs

Ingredients
- 4 medium zucchinis, spiralized
- 1 pound ground beef (or turkey)
- 1/4 cup grated parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for cooking)
- 2 cups marinara sauce
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the ground beef, grated parmesan cheese, chopped parsley, egg, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
- Bake the meatballs in the preheated oven for 20 minutes or until cooked through and browned.
- While the meatballs are baking, spiralize the zucchinis into noodles using a spiralizer.
- In a large skillet, heat olive oil over medium heat. Add the zucchini noodles and sauté for about 3-4 minutes, until just tender but still slightly crisp. Season with salt and pepper to taste.
- In the last few minutes of cooking the meatballs, heat the marinara sauce in a saucepan over medium heat until warmed through.
- To serve, plate the zucchini noodles, top with meatballs, and spoon marinara sauce over the top. Garnish with additional parsley or grated parmesan if desired.
